When you replace these sensors, coolant will come out of the hole until you put the new one back in there, correct?

If it is still bolted onto the car, yes.

So should it just be drained before I install the sensor, or should I try to do a quick swap instead? I would like to keep air bubbles in the system to a minimum...

Just swap it out real quick, hardly any came out and my coolant overflow tank was more than half full.

None came out at all. I wonder if that was a good thing... I could see it in all it's green glory down in there, tho.

It should have a little bit. Check the rad when it is cold. If whne the cap is removed and the system is cold the coolant is right there, you are good.
